What is Matcha Green Tea?
Matcha tea is highly concentrated green tea that is made from the entire leaf and ground into a powder. Bascially with matcha you ingest 100 percent of the nutrient value of the leaf, whereas with regular green tea you are only steeping the leaf in hot water and then discarding it.
A cup of matcha tea contains the nutritional equivalent of about ten cups of regular green tea and the level of antioxidants in Matcha tea is about 137 times that of regular green tea. That is quite a nutritional powerhouse!
How to Make Matcha Green Tea
Match tea sets can be purchased at most speciality tea stores or health food stores. You can purchase a small sifter with a small bamboo whisk. I use the little screen that fits into my Japanese teapot and press the powder through it into the cup. I also use a little spoon rather than the mini whisk. If you become a Matcha tea enthusiast you may want the speciality items to prepare for it but they aren't necessary. Its easy to improvise.
- Sift 1 to 2 teaspoons of matcha powder into a cup using a small sifter.
- Add 2 ounces of hot water that is just under the boil
- Whisk the powder vigorously in a zig-zag motion bringing the tea to a froth.

I find that drinking matcha gives me a calm but alert feeling. It is not a tea to drink late in the day as it does contain about as much caffeine as coffee.
The Controversy of Lead in Matcha Green Tea
Matcha Green tea contains high amounts of lead. The leaves, especially if cultivated in China, absorb lead from the environment and because with Matcha you are consuming the whole leaf you will consume the lead. It is best to limit yourself to no more than one cup a day and children should not drink Matcha. With regular green tea, the lead is still there in the leaf but it doesn't leach out when it is steeped and remains in the leaf which is discarded.
